It really doesn’t get easier than this salad. Six ingredients, six minutes. Sometimes the simplest recipes are the best. Yes, you could heat up the flavour with chili flakes, or garnish it with sliced olives, but why?
This salad is great as a side-dish, work/study snack, or all on its own. Of course, you can fancy it up with other add-ins, but really, before you add truffle oil, try my simple, back-to-basics version.
Makes roughly 4 servings
1/2 large red onion, chopped roughly
1 medium cucumber, sliced into thin half-moons
3 tomatoes, chopped roughly
2 tablespoons olive oil
1/2 cup feta
Salt and pepper, to taste
Combine the onion, cucumber, tomato, and olive oil in a large bowl. Mix well. Add the feta, taste, then add salt and pepper as necessary. Enjoy!
