Eggnog Waffles


These waffles, like so many of my recipes, are the delicious result of a brunch. They’re actually quite easy to make: take your standard waffle recipe, replace the milk with eggnog, and add nutmeg! I didn’t add any liquor to mine, but I’m sure that a dash of brandy with the eggnog would make the waffles even better.

Eggnog Waffles

Makes 7-8 waffles

3 cups flour

4 teaspoons sugar

6 teaspoons baking powder

2/3 teaspoon salt

1 teaspoon nutmeg

6 tablespoons vegetable oil

2 cups eggnog

3 large eggs

Plug in your waffle iron. Combine the flour, sugar, baking powder, salt, and nutmeg in a large mixing bowl. Add the oil and eggs, then the eggnog, stirring until just combined. Depending on the thickness of your eggnog and your flour consistency, you may need to adjust the quantity of eggnog. Let the batter sit for 20-30 minutes, then cook the waffles according to your machine’s instructions. Enjoy!
