By the end of the week, my motivation to cook is nearly gone. The resulting meals are generally 1) leftovers, 2) salads, or 3) smoothies. Two weeks into the August heat, #3 has become especially tempting.
I’m including below two smoothie recipes. The first one I made for ‘dinner’ last night, in a fit of laziness so extreme that I did not feel like making a salad. It’s refreshing, has a gorgeous colour, and could easily straddle the line between ‘dinner’ and ‘happy hour’ with the addition of a glug or two of liquor (my personal choice would be gin, with crème de cassis in a close second).
The second recipe was a reward for a day of bodyrock + 1.5h bike ride. It’s delicious (make it indulgent by adding a scoop of vanilla ice cream!) and surprisingly healthy–as long as you don’t add any ice cream, the smoothie is sweetened by the dates alone.
1/3 large cucumber, sliced thinly
1/3 cup blueberries
1/4 cup blackberries
1/4 cup sweet and sour mix (or, more simply, add lemon juice and sugar, to taste)
3 ice cubes
1/3 cup cold water
Place all ingredients in a blender, and blend until a smooth texture is achieved.
Banana Date Smoothie
1 banana, sliced
1 medjool date (if you have smaller dates, use two or three), pitted and chopped roughly
1/3 cup milk
3 ice cubes
1 teaspoon cinnamon
1/3 teaspoon ginger
Place all ingredients in a blender and blend until a smooth texture is achieved.
